snow days & pancakes

Being the crazy snow day it is here in North East Ohio, I decided it was the perfect day for pancakes. The 'perfect pancake' mission of mine actually started a few months ago, so we'll take a step back through a couple of older attempts here in the first post. I decided to start off with vanilla pancakes, no particualr reason really, other than that fact that I was sipping some coffee overdosed with french vanilla creamer at the time. Of course I've always had a spot on my tounge for vanilla flavor -it just never occured to me to blend it into my pancakes.

By all rights, this blog should be starting off with my 'famous' banana pancakes -but I decided to stick to one until perfected, that will be the formula here permenantly (and by permanantly I mean until I get bored of that).

First Attempt | October 12, 2009

The first attempt was a complete whim, as stated above -so ther wasn't much forethought put into the whole thing. I even went so far as to drop some french vanilla creamer into the mix, something you'll see in every vanilla recipe from here on.

2cups pancake mix
1 ¹/² cups milk
1tsp vanilla
3tbs soft butter
1 egg white
¹/² cup french vanilla creamer

griddle at 350°
batter in fridge for 30 minutes

Overall, the first attempt was a flop by my standards -but they vanished in seconds all the same. The taste was right, but they were too thin, and burned a bit too fast.

Current Attempt | December 8, 2010

There were a couple of attempts between these two, but I'll just sum them up here. The taste remained about the same, and I was able to improve on the other two a few points (4.3.3). This last attempt was far more successful, and thus more worth my time to put together a blog entry for.

2 ¹/³ cups pancake mix
1 cup milk
3tbs melted butter
(mixed with the milk for cool down)
2tsp vanilla
2 egg white
¹/² cup french vanilla creamer

griddle at 320°

The 320° was too hot, otherwise this may have been the right mix -which means I'll likely rerun this with a lower templerature before moving on to another recipe. The taste may have been a 5 as well had they not been slightly burned. And that's all I have -the perfect vanilla pancake is within reach, and I'll be moving on to banana after that (followed by blueberry, at the request of a certain someone).
